Pea protein is a great option. Best to not have too much soy.
As far a vegetarians being on the Rosedale program, we actually spent many years in India implementing the program very successfully.
Though some did eat eggs, which helps give some more meal options. It does work very well, though more restrictive with your choices.
We found that in India the spices and herbs were so tasty it made all the vegetable dishes delicious.
