Improving Insulin Sensitivity through diet
Hi,
As a South Indian, we tend to combine rice and black gram (Urad
dal) - soak this overnight - grind it with some fenugreek seeds and
ferment this into a batter and use this batter to make dosas and
idlis.
I have been on a no starch diet (Rice, Grains, Pasta and Potatoe)
for six weeks now to address my insulin resistance issue - I am ok
with this except for the exclusion of idlis and dosas.
In Ayurveda, the combination of rice and dal (lentils) is accepted as the best food to go on a cleanse on. This dish is called kitchedi.
What is your view on this combination of carbs and protein? My understanding is that it is also low GI - - Would it be possible to include this in moderation?

Protein that is not needed at the moment is converted to carbohydrates –
carbohydrates that are not fiber turns to sugar
Pea protein is a great option. Best to not have too much soy. As far a vegetarians being on the Rosedale program, we actually spent many years in India implementing the program very successfully. Though some did eat eggs which helps give some more meal options. It does work very well, though more restrictive with your choices. We found that in India the spices and herbs were so tasty it made all the vegetable dishes delicious.

Hi Ken,
Thank you for your response. Is there any research on how (Carb + Protein)
fermented together prior to cooking or cooked together (in case of a
kitchedi) breaks down in the body - and is that akin to the sugar that
comes from greens?
