Nuts

Hi I was wondering about the effect on roasting nuts, especially at high temperatures i.e 400deg F.

In Dr. Rosedale's book one of his recipe suggestions is Nutola and he says to rast them at 400deg F for 10-15 mins, however I am worried that this will have a negative impact on the oils contained in nuts.

This could at least destroy some of the nutritional value and at worst make the fats rancid and therefore be harmful.

Would love an insight on this, thanks :)

    Also if rancidity is the case or the fats changing from good to bad - are some nuts more susceptible then others?

    And can I use regular grass fed butter in place of clarified butter??
