Post Prandial Glucose Levels
I am a 60 year male who has eaten LC for the past couple of months. Recently I got a glucose meter so I wanted to see what my fasting and post prandial levels were. My fasting level over the past week has averaged 74. I also did readings on two separate days during the same week one and two hours after my morning meal (which follows a high intensity workout.) My 1 hour readings were 78 one day and 74 the other day. However, my 2 hour readings were actually higher - 97 the first day and 89 on the second day. Why would this be happening? Shouldn't it be the other way around - higher readings after one hour and lower readings after two hours? Even though these levels are in an optimal range should I be concerned that my two hour readings are higher than my one hour readings? What does this indicate?

If it is going up after the workout your work out it is acting as a stress on your system.

I realize that high intensity workouts (vO2 max reaching 100% during intervals) requires more glucose burning than fat burning. My glucose levels post exercise have proven that out as they are higher than pre workout fasting levels (74 avg. fasting vs. 93 avg. post workout.) However, I was surprised that a full 2 hours after a meal and 3 hours after the workout my levels would still be higher than 1 hour after a meal. Should I even be concerned since the levels are remaining < 100?
