How Quickly can my body switch between Fat burning and Sugar burning

At the end of chapter 3 - There is a bold section that starts with: "Why you want to be a Fat burner, not a sugar burner" - This is a great section. But it brings up a question for me.

Carbs = Burn as Sugar
Protien = Burns as Sugar
Fat = Burns as Fat

Let's assume I do not eat any carbs in a meal. 4ounces of MahiMahi and half an avocado.

Am I burning fat of the avocado first? Or does the fish burn as sugar? And if so, how long will the avocado "stay around" in my stomach waiting for me to switch back into Fat burning mode?
OR
Do I have it all wrong and can our body burn sugar and fat at the same time?

For some reason, I have the idea that it is an either or .. EITHER .. we burn sugar or we BURN fat. We can switch between them but not at the same time... I hope I am making sense.

My point is, since I am on a mission to lose 100# I am very careful at my carbs and even my protein intake. I have learned to love fish. And I am using avocado and olive Oil as my primary sources of fat/energy.

In the evening would it be best just to each avocado (a small one) and nothing else) so that I can be in fat burning all night?

I know this is a lot of questions. But I am trying to get my mind around how it works.

    There is so much information to take in and you are doing a great job. The one thing missing out is 'excess' protein. If you eat the right amount of protein then it is used to rebuild the body, so you ideally do not want to really ever 'burn' protein. Towards the bottom of my message is a response that Dr. Ron gave in a debate recently though it gets a lot deeper. There are some wonderful blog posts on our website that go in to some wonderful explanations.
    You are doing great! eat the right amount of protein, and eat some fat, as long as you do not eat non fiber carbs you will be burning fat even when you eat protein. Once your body is in burning fat mode, then it will be eating all the time (fat around your middle) like you said, even when you sleep. Eat when you are hungry only, if you feel hungry a lot, then increase your fat, if you never feel hungry try decreasing your fat a little, to find that balance of what you 'need' as we want you to eat the fat you 'have' more. Best to never eat 3 hours before bed. So for dinner, the avocado, some fish (size of a deck of cards is around 15 grams of protein) and a salad with some olive oil would be great. Spread out your protein requirements ove the day, best not to skip on breakfast, for me I have a protein drink, or you can have a couple of eggs and some turkey bacon.     'The bottom line is that excess protein gets burned as fuel and that's not healthy. The amount that is first converted into glucose depends on the protein and the composition of amino acids that make it up. Some amino acids convert directly into glucose. Others enter energy pathways as intermediate hydrocarbons; not literally glucose but shorter carbon fragments of same. Either way, one must deaminate the amino acid, transferring the nitrogen to ammonia and urea that circulates as a poison until it can be excreted in the urine (hence the name). If nothing else, protein will cause harm by having to burn the excess one way or another and therefore not burn fatty acids or ketones. Then there are the important effects on metabolic hormones and pathways. It raises glucagon that raises glucose and also growth hormone that does the same and then it raises insulin; talk about metabolic schizophrenia. It profoundly raises mTOR increasing risk of cancer.
