Should I count the complete protein I get from vegetables in my overall protein count for the day?

You should as long as it is a complete protein, most of the protein in vegetables is not a complete protein.

I found the nutrition data on spinach and it says that spinach is a complete, very high quality protein. http://nutritiondata.self.com/facts/vegetables-and-vegetable-produc...

Spinach is great, though if one is vegetarian you would have to eat a lot of it to meet a days protein requirements.
