Vitamin C supplementation

Over a long time I have gone on the Atkins diet a number of times. I have lost a lot of weight (22Kg). However, I reached a plateau I have not been able to overcome. Then I found your website and Dr Jason Fung's website.
I now don't worry about reducing my vegetables, but still have about 20gm of carbs in the form of high fibre vegies like celery, cucumber, mushrooms, green beans etc.. I have drastically reduced my protein and increased fat mainly in the form of nuts.
I have also introduced fasting for 42 hours 2 times per week.
I feel great and again losing weight again. However, I do have a slight problem. In your documentation you say that I should eat when hungry. Well, have hardly been hungry, so it is difficult to adhere to that rule. I have been doing this for a couple of weeks.
I am now getting hungry a couple of times a day when fasting which didn't happen when I started.
My immediate problem though is that I have been supplementing Vitamin C (6gm per day in 3 divided doses per day) as per the Linus Pauling recommendation for some time. I have read in Dr Rosedale's articles that the body sensitivity to Vitamin C on the diet increases. I already have about 280mg of Vitamin C from the diet in the form of the vegetables I have.
My question is, should I continue with supplementing the Vitamin C or should my sensitivity increase enough on the diet to have the same benefit as the supplement? Or, in fact, is the supplement actually detrimental to the diet by affecting insulin?
